Imperial (Stout) Old Fashioned

Imperial Old Fashioned
makes 1 drink

2 oz whiskey
1 to 2 bar spoons or teaspoons of Imperial Russian Stout syrup (recipe below)
3 dashes chocolate bitters (we used Fee Brothers Aztec Chocolate bitters)
3 dashes Angostura bitters or something similar (we used The Bitter Truth Jerry Thomas' Own Decanter bitters)
grapefruit peel for garnish

Combine all ingredients in a mixing glass with ice and stir. Pour into a rocks glass with a large ice cube and garnish with a grapefruit peel.

Imperial Russian Stout Syrup

1 cup Imperial Russian Stout
2/3 cup raw brown sugar

Pour 1 cup of imperial stout into a pan and slowly simmer over low heat until it reduces to two-thirds of its initial volume. Next, add in an equal proportion of raw brown sugar and stir until it dissolves completely. Allow it to cool completely before transferring to a clean glass bottle with an airtight lid. Store in the refrigerator for up to a month.

Lightly adapted from Jacob Grier.
