Ginger Beer Margaritas + Mexico!

Happy Cinco de Mayo!  We're celebrating today with some margaritas of course – only these are made with zesty ginger beer to give your drink a little extra kick!  Also, we thought we'd share some photos from a trip to Mexico that we took a few years ago for a friends' wedding. Salud! 

Ginger Beer Margarita
makes 1 drink

2 oz tequila
1 oz fresh lime juice
3 oz ginger beer (we love Fever-Tree)
1/2 oz simple syrup, optional*
Coarse salt for lining rim
Lime, for garnish

Line a small rocks glass with lime juice and dip in coarse salt. Add a large ice cube and set aside. Add tequila, simple syrup (if using), and lime juice to a cocktail shaker with ice and gently shake. Strain into the prepared glass and top with the ginger beer. Garnish with a lime wheel and serve.

*We found that the ginger beer was sweet enough, though some may prefer theirs a little sweeter.
